‘I don’t think there could be a place more perfect for me than New Zealand’ I told Nikul today while returning from a trek at Kitekite falls. Three more months and I will officially be a citizen 😀 But looking back at the journey over 7 years now, from starting of as a part-time waitress in my uni days to finding my love for children/montessori and then yoga/ healthy food. I feel so grateful to this stunning country for providing me with the space and support to grow and pursue my dreams. Talking about dreams and passions, it can’t get any better than being able to share what I can give people- i.e: cooking workshops 🙂 So grateful to 3 beautiful yoginis Martina, Steph and Kiri for accomodating me to do a cooking workshop during their yoga workshop weekend at Waiheke island during the ANZAC weekend. I have never really been a Muesli person. I am more of a porridge/ green smoothie morning person, till I ate a variation of this Muesli sent to me by my sis in law Pinal about 2 years ago now. This is my version with my new found love-maple syrup.

1.5cup Almonds

1 cup Walnuts (broken into pieces)

1 cup Activated Hazelnuts or Macadamia nuts

1 cup chopped Activated Brazilian nuts (broken into pieces)

1.5 Cup Gluten free Oats

¾ cup Activated Sesame seeds

¼ cup Activated Pumpkin Seeds

1 cup Goji Berries

1.5 cup Maple Syrup

1 Tablespoon Cinnamon powder

1 Tablespoon Cardamom powder

1 cup dry grated coconut


Step 1- Preheat the oven to 180 degrees Celsius.

Step 2- Add maple syrup in the pan and warm it up.

Step 3- Add cinnamon, cardamom powder and all nuts except goji berries and coconut. Mix it well.

Step 4- Spread it on a wide baking paper and bake it for about 15-20 minutes. Keep stirring every 5 minutes.

Step 5- Then remove it and let it cool. Add grated coconut and goji berries and mix well. Remove it in glass container and store in the fridge/freezer for up to two month.

Step 6- Enjoy it with your favourite nut milk or coconut yoghurt and some fruits for breakfast.
